GUIDELINE 61 Frozen Dessert Processing

The DPC has recognized the need to provide a Guideline specifically for the manufacturers of frozen desserts. Through the National Conference on Interstate Milk Shipments and the Pasteurized Milk Ordinance (PMO), the U.S. regulatory emphasis given to a safe supply of Grade A milk and milk products is unparalleled. However, although 10% of the U.S. milk supply enters the production of frozen desserts, these products are typically processed without the level of regulatory inspection and oversight that is mandated for Grade A products under the PMO.
